Kalema’s passion for cooking led him to YMCA Comprehensive Institute (currently YMCA University), where he obtained a diploma in Hotel Management. from there, he entered the hotel industry, gaining experience at renowned establishments such as Hotel Equatorial, Imperial Royale, Kampala Serena Hotel, and Kabira Country Club. His culinary journey, however, took an unexpected turn when he stepped into a management role.

One day, while managing a hotel, the head chef failed to show up. Determined not to let his boss down, Kalema shed his suit and took up the chef’s mantle. “I put on the kitchen apron to revive my childhood passion,” he remembers. “From that day on, I never went back to wearing suits. Cooking felt like my heartbeat.”

Kalema’s natural talent quickly caught the attention of the industry. His culinary skills were sought after by top hotels, and he was called back to Hotel Equatorial, where he had interned. There, he met his mentor, Chef Mitti, a man who had been a leading chef during Idi Amin’s regime. “Chef Mitti taught me the authentic art of cookery,” says Kalema. “His mastery of Italian and Mexican cuisines became my inspiration.”

Kalema’s breakthrough came during the 2007 Commonwealth Heads of Government Meeting (CHOGM) in Kampala, where he was tasked with preparing meals for international visitors at the Imperial Royale Hotel. His remarkable skills and leadership helped him train many chefs to meet the high standards required for the event. From Italian classics like Pollo alla Parmigiana and Chicken Marsala to local Ugandan dishes, Kalema’s expertise stood out.

From Master Chef to Dietician

Despite his success as a chef, Kalema noticed a significant gap in public awareness regarding proper nutrition. “I realized that while I could cook delicious meals, people didn’t understand what they should eat, when, and why,” he explains. This realization prompted him to pursue a degree in Food and Nutrition from Makerere University. “One day at Mulago Hospital, I saw children being treated for malnutrition, but no one was guiding them on what to eat. That’s when I decided to become a dietician.”

After completing his degree, Kalema furthered his studies with a diploma in dietetics, determined to combine his culinary knowledge with scientific expertise. He began educating the public on healthy eating through media appearances and the publication of his book *The Nutrition Best Magazine*, which promotes a holistic approach to wellness. “In my book, I talk about what I call ‘New Start,’” Kalema says. “Nutrition, Exercise, Water, Sunlight, Temperance, Air, Rest, and Trust. These are the principles that guide a healthy life.”

A Dietician at Fairway Hotel

Today, Dr. Kalema serves as the head dietician at Fairway Hotel, where his dual expertise as a chef and dietician ensures that guests enjoy both delicious and nutritious meals. “Fairway Hotel is like the mother of all hotels in Uganda,” he says with pride. “We go the extra mile to ensure that our clients eat healthily, and even our staff are in top shape to serve them well.”

Dr Kalema’s day at Fairway begins with rigorous checks to ensure food safety. “We start each day by making sure all food is properly covered and contamination-free,” he explains. “Our secret to delicious meals is preparation. We give ourselves enough time to preserve the nutritional value of the ingredients.”

Under Dr Kalema’s guidance, Fairway Hotel has become renowned for its balance of taste and health. “As a dietician, my responsibility is not just to ensure that the food tastes good, but also that it is nourishing for the body. We make sure that every meal we serve is both delicious and beneficial.”

A Vision for a Healthier Uganda

Dr Kalema’s work extends beyond the kitchen. Through his media appearances and public health campaigns, he educates Ugandans about the importance of healthy eating. His efforts are driven by a belief that nutrition is key to a healthy nation. “Too many people are unaware of how their diet affects their health,” he says. “I want to change that by providing clear, practical advice on how to eat well and live better.”

People who have enjoyed Dr. Kalema’s masterly cooking “For the years I have spent cooking, many VIPs in Uganda have enjoyed my cuisines, including President Gen. Yoweri Kaguta Museveni and several other visiting heads of state. I have also had the privilege of teaching cookery to prominent figures like Bobi Wine, Jose Chameleone, Dr. Kizza Besigye, and Bebe Cool. Currently, the person I most desire to cook for is Dr. Moses Ndimukika Maka, the leader of the Seventh-day Adventist Church in Uganda. I believe that if he is well-fed, he will share uplifting words that can heal and uplift people’s troubled souls whenever he preaches.”

From a child learning at his grandmother’s side to a celebrated chef and dietician, Dr. Kalema Daniel’s journey is one of passion, perseverance, and a deep commitment to improving lives through food. His story is a reminder that food is not just about flavor—it is also a cornerstone of health and well-being.
